Summer Vegetable Bake
Yield: 8 servings
2 pounds yellow squash1 pound zucchini 2 large Vidalia onions 3 tomatoes Salt and pepper to taste Italian salad dressing Crated Parmesan cheese Cut the squash, zucchini, onions, and tomatoes into slices. Altenate layers of each in a buttered baking dish, sprinkling salt and peppers over each of the layers. Sprinkle the Italian salad dressing over the layers. Bake, covered, at 350 degrees for 45 minutes. Sprinkle the Parmesan cheese over the top. Bake, uncovered, for an additioal 15 minutes.
